English muffins are generally used for brunches to prepare the various (and delicious) eggs Benedict, Florentine or Royale. Surely yummy at the nth degree. But they are also a good idea to prepare a tasty and healthy packed lunch for the office. The pairing of avocado and salmon is a classic, but instead of using the usual wholegrain bread, this time I’ve tried something more “compact”. I added some different flavours to the ingredients as well. Oven baked salmon instead of plain – and boring – steamed one, and spicy avocado with an extra kick.
INGREDIENTS (serves 1)
- 1 150g frozen salmon fillet
- 1 ripe avocado
- juice of 1 lemon
- 1 clove garlic, crushed
- basil, chilli flakes, salt, pepper
- 2 English muffins
- 2 tbsp plain cream cheese
Pre heat the oven at 200ºC fan. Place the frozen salmon in a small baking tray and pour over half of the lemon juice. Spread half of the crushed garlic over the fillet, sprinkle some chopped basil and season with salt and pepper. Cover tightly with tinfoil then bake for 15 to 20 minutes according to how much cooked you like the fish. Take out of the oven, let stand still covered for 5 minutes, than remove the tinfoil and let the fish cool down.
In the meantime, prepare the avocado. Scoop out the flesh from the skin and roughly chop it, place it in a bowl and pour over the other half of the lemon juice. Season with basil, chilli flakes, garlic, salt and pepper according to your taste and mix well with a spoon gently crushing the avocado pieces. The texture should be still chunky but with some creaminess in it.
At this point there are two choices. You can either assemble the muffins and pack them, or keep the ingredients separate until it’s lunchtime. The decision is really up to you. Obviously, assembling them just before eating maintains the individual textures of the different ingredients, but I guarantee they’re nice in both ways!
So, toast the English muffins, spread one half with the cream cheese, top with the salmon and the avocado, and cap everything with the other half. Lunch is served!
