It is literally easy peasy! Haha! With just three ingredients (plus seasoning obviously), and just five minutes to be ready, who won’t love this dish?
I guess I was a little too brave last week, having gazpacho with this – still – cold weather. But anyway, it was delicious and definitely worth the challenge. This week though, I move back to something warm and comforting, and easy to make too!
INGREDIENTS (serves 1)
- 1 can marrowfat peas (but normal peas work well too!)
- 1/4 yellow onion, sliced
- 3-4 slices turkey ham, chopped
- 1 sprig of fresh thyme (or a seasoning cube – remember?)
- 1 cup boiling water
- 1 pinch of salt
- 1 tbsp extra virgin olive oil
Heat up the oil in a saucepan, quickly fry the onion and add the thyme/seasoning cube and the ham. Cook for 2-3 minutes to let the flavours develop.
Drain the peas from their preservation liquid, and add them to the saucepan. Stir well to mix, and cook for further 3-4 minutes before adding the boiling water and the salt.
That’s it! Simmer for 5 minutes, then take off the hob and quickly press with a potato masher. Serve immediately with some grated parmesan cheese if you like it.
