Turkey & Pepper Quesadillas

You already know that I’m a fan of wraps. I even dedicated a post to them a few months ago! What I don’t like though, is being repetitive. After weeks and weeks of – nice, obviously – filling variations, I got a bit fed up by the same way of serving them.

So, while browsing my internet resources (e.g. Bloglovin, Pinterest and of course, my WordPress reader), I found out there is another interesting way of using wraps. Quesadillas. I generally have them when I go to Mexican restaurants, but why not try to prepare them at home?

INGREDIENTS (serves 2)

  • 2 wholegrain tortilla wraps
  • 140g turkey breast sliced, roughly chopped
  • 1 red bell pepper, cut into strips
  • 1/4 onion, thinly sliced
  • 1/2 courgette, sliced
  • 40g cheddar cheese, shredded
  • 2 tbsp extra virgin olive oil
  • salt, pepper to taste

In a saucepan, quickly fry the onion with the olive oil, then add the peppers and the courgette and simmer until they become soft. Add a splash of water if they get too dry. Season with salt and pepper and set aside.

Pre-heat the oven at 180°C fan, line a baking tray with greaseproof paper and place one wrap on top of it. Layer the shredded turkey, top it with the pepper-courgette mix and generously sprinkle the cheddar cheese. Cover with the other wrap and bake for 8-10 minutes until the cheese is melted and the wraps get crunchy.

I served it with an avocado and yogurt dip, prepared as follows:

  • 1 ripe avocado
  • 2 heaped tbsp Greek yogurt
  • 1 tbsp Guacamole seasoning
  • juice of 1/2 lemon
  • salt, pepper to taste
  • 1/2 tbsp garlic paste

Simply whizz all the ingredient with a blender or a food processor until you obtain a smooth cream. Add some coriander, parsley or chive if you like the taste.
