Nothing special really, but a great idea when you get home late and don’t want to spend much time preparing your lunch for the next day. Basically what happens to me every Tuesday and Wednesday coming back from dance class.
Quick, easy and healthy. Just heat it up quickly before eating, and voilà, le lunch is served.
INGREDIENTS (serves 1)
- 2 salmon fillets
- 1 spring onion, sliced
- salt, pepper, chilli flakes
- extra virgin olive oil
- 2 handfuls of curly kale, roughly chopped
- juice of 1/2 lemon
Take the skin off the salmon and cut it into chunks of approximately the same size. Place them in a microwaveable bowl, scatter over the spring onion and season with salt, pepper and chilli flakes to taste. Drizzle with olive oil. Seal the bowl tightly with cling film, and stick it in the microwave at full power (mine is 800W) for 5 minutes.
The moisture of the fish creates a steaming environment that cooks it perfectly without drying the flesh. Leave to stand for a couple of minutes before taking off the cling film.
In another bowl, season the kale with salt, pepper, the lemon juice and a drizzle of olive oil. Again, cover tightly and microwave at full power for 4 minutes. In this way, the kale becomes soft and very, very tasty. Same as for the salmon, leave to stand for a couple of minutes.
Place everyting in an airtight container to take to work. But obviously, you can also prepare it and eat it straight away. Enjoy your healthy lunch with dark rye crispbread or rice cakes.
