This is not properly a recipe for a dish, but it’s definitely a staple when it comes to Italian cooking. We use it as a base for sauces, meats, rice, pasta, almost everything really. You get it already prepared in the frozen food section in supermarkets. Unfortunately though, it’s not very much known here in the UK, but it’s so easy to prepare that everyone should have a bag in their freezer, ready to be used.


  • carrots
  • celery stalks
  • onions

Just chop everything as fine as you can, tip in a bowl and mix thoroughly. Store it in an airtight container or a resealable bag in the freezer. For convenience, you can also freeze it in ice cube trays and then keep the cubes in a container.
