You haven’t lived till you’ve marinated your cheese.
That’s right methinks. Feta cheese generally comes in blocks that are never used in one go (unless you’re cooking for a whole family), end eventually ends in the fridge wrapped in cling film until it gets mouldy. Or at least, that’s what happens to me, every single time.
Marinating it in oil and herbs is a very smart solution to preserve this nice cheese for longer, adding extra flavour and making it more versatile as well. Just cube it up, tip it in an airtight jar and season it with whatever you like and is on hand. Fresh and dried herbs, chilli, garlic, ginger, pepper, paprika…you name it. Cover everything with extra virgin olive oil.
Store it in the fridge and use it within a couple of weeks. I also keep the oil once the cheese is finished and either use it for cooking and dressing or keep it to preserve some more feta.
